I'm a big fan of plain omelettes. Usually I beat the eggs with a little bit of salt, pepper and two tablespoons of water. Then I heat the pan with a bit of butter, and pour the egg batter in. Then I carefully keep on pushing the edges of the omelette towards the middle with a fork. That way the omelette will have a creamy center.

I heat the pan, add some oil, and chopped onions, green and red peppers, and let them saute a little while I beat either one or two eggs in a bowl. I add pepper and salt substitute to the omelet mixture. If I have some cheese handy, I will shred a little into the mixture. I will then put the onion mixture into the eggs and pour it back to the pan. I will usually have it with salsa or ketchup, preferably the former and a slice of whole wheat bread, but usually it is just the eggs along.
