Homemade garden goodies... recipes anyone???

In another post I stated I'm on my way to restore my hubby's grandmother's pressure canner. I thought I would be able to make some of those "old" favorites like green beans, and veggie soup better this way, and save some room in my freezer this summer. Last winter my FIL requested soup for Christmas, and that's what we gave him. Frozen soup, however, isn't easy to transfer and keep frozen (especially when we have warm winters!) and it's not a guarantee that my in-laws have room in their freezer for all the pints of soup that I deliver.
I'd like to can some homemade soups for him this year. It will make storage and transportation a little easier. I plan on tomato sauce/salsa and spaghetti sauce. I found a recipe for a vegetable soup that I thought I'd try. Does anyone else have more ideas? My garden consists mainly, right now, of green beans and tomatoes, but there's a farmer's market open everyday, so whatever anyone suggests will be welcome!

I have a very important piece of advice for you. any canning instructions should be new and up tp date. When i was a young woman we canned our tomatoes in Hot Baths. You put the jars in a canner of hot water and boiled them for a certian length of time. My daughter- n-law canned some this way, for some reason she being pregnate at the time decided to call the extension office and find out if the tomatoes would be safe. They told her not to eat them to through them out. because the tomatoes That are being grown now do not have the acidity that they did 30 to 40 years ago. So be very carful with those canned vegetables.

That's interesting. I didn't know that. :) The tomato recipes that I used last summer all had me put lemon juice in each jar before sealing. At first, I thought it was silly, but since you told me that, it makes sense.

Yes, I processed in the water bath. That was the directions from the ball blue book said. How to process tomatoes. I think they could be done either way.
Last summer, I didn't remember I had my hubby's grandmothers pressure canner! :) I didn't can anything that HAD to be processed in the pressure canner. This year, fingers crossed, will be different.

My mom always made some soup of tomatoes, beans, brocolli, and some other veggies- she loved it- I could not stand it- I love all those things separately but not together- We can beans, salsa, a club sauce (for burgers), tomatoes for chili, tomatoes and peppers. I was going to try to do fruit this year also- but have not gotten around to it- Whatever you do I'm sure you will have fun-
Have you ever tried to freeze corn on the cob?

I'd love to try your club sauce. Would you mind sharing that recipe with me?
I had just stuck a 1/2 doz. ears in the freezer the other day. Thought I'd give that a try. My mother said that it can be done, just can't leave it too long, or the corn will get mushy.
I made my first batch of dill pickles this weekend as well. This recipe doesn't contain salt, so I don't know how long they'll be able to sit. My dad is on a low salt/sugar diet, so we've been trying to accomodate this in some of the foods he likes to eat. Dill pickles being one of them. I'm anxious to give them a try, but the recipe said to give it AT LEAST a week! sigh. guess I'll have to wait. :)
