I am looking for carrots receipe, anybody has one to share

I really enjoy eating carrots. I always have in my refrigerator. I eat them as snacks, and I would like to try some carrots receipes. The only thing I make with them is carrot cake so I need to try other things anyone have a great carrots receipe they want to share.

In India there is a very famous sweet dish made out of carrrot. This you can eat as dessert, or on happy occasions or even as snack. It is called Gajar ka halwa. Gajar in Hindi means carrot. Ingredients: Grated carrot 1 kg Milk 1 litre Sugar 2 cups Vegetable oil (Ghee) 2 tbsp. Dry fruits (sliced almond and cashew nuts, raisin ) 1/2 cup Cardamom powder 1/2 tsp. Just put some vegetable oil (Ghee) in the pot, put grated carrot and cook it with milk, when carror is soft, add sugar and nuts and cardomom for good fragrance. It is very easy and tasty.....do try it. If Sliced carrot is cooked in vinegar, it tastes like pickle and gives taste to food.

I like to roast them along with potatoes. I peel and chunk them, then pour a little olive oil over them, and toss to coat. I then sprinkle garlic salt on them and roast uncovered in a deep dish, about 400 degrees.

The website ichef.com also has good recipes. There is a dish called copper pennies that my family really enjoys. Some versions of the recipe call for canned carrots, but I prefer the one that uses fresh carrots like the one found on ichef.com

My mom used to shred them like slaw and add raisins to serve as a salad. I loved them. I don't know if she added anything else.

I once bout a TON of carrots at a farmers market. I made soup with them and it worked pretty well. This one has curry and coconut milk. 1 tablespoon canola oil 2 teaspoons curry powder 1 clove garlic, smashed 1 (1/2-inch) piece ginger, smashed 1/2 medium onion, coarsely chopped 1 pound carrots, sliced into 1/4-inch-thick rounds 1 medium bay leaf 2 1/2 cups low-sodium vegetable broth 1/2 cup canned coconut milk Toasted unsweetened coconut flakes for garnishing (optional) Heat oil in a medium saucepan over medium heat. Add the curry powder and garlic, and toast until fragrant, about 30 seconds. Add ginger, onion, carrots, bay leaf, and broth. Increase heat to medium-high and bring mixture to a boil, then reduce to medium-low and simmer until carrots are soft when pierced with a fork, about 20 minutes. Discard the bay leaf. Working in batches, pureée in a blender until smooth. (Be very careful when blending hot soup, as steam could blow off the blender lid.) Pour soup into a clean pot and return to the stove over medium heat. Stir in coconut milk and adjust seasoning. Note: This soup can be served hot or cold. If you’re serving it cold, you may need to thin it with a little water.

Hi there. Heres a good home made recipe for carrots, you can always half boil them, drain and bake in a 2 caps of oil, garlic granules, honey, salt n pepper... Nice way to eat carrots...

Something that's quite easy to do is to slice the carrots down in bitesize pieces, boil them until they are a bit soft (as soft as you like them, if you want them a bit al dente then don't boil them as long) and then just toss them with a bit of butter or honey. It glaces them over, makes them nice and glossy and a little bit sweeter than normal. Great as a sidedish!

This something I have made without a recipe and that is to saute carrots with onions, season to taste, top with parmesan cheese and eat. It's simple and very good plain or you can dress it up with some kind of nuts, garlic, etc. Just experiment to taste but my preference is to keep it simple.
