I Had A Request For A Special Cookie - Healthy & Tasty Sugar Free Cookie

I had a request from a dear sweet lady for an oatmeal cookie without sugar. She wanted a healthy cookie for a child that deserved a special treat. This recipe is for you, Kate’ s Mama. I made these cookies a few years ago for some of my diabetic friends for Christmas Gifts. Most sugar free recipes still have splenda. I hate fake sugar and would rather use real sugar myself. I am concerned about the health risks with splenda. However a diabetic has no choice. I know because for about a year I was on a diabetic diet. No fun at in that diet. LOL
They are very good tasting. I don’t think they are too sweet , they are soft and moist. They do not have a lot of oats in them but they are still tasty. I have used old fashioned oats as well as the quick oats. The consistency is a bit different as the quick oats are smaller. Hope your child enjoys these cookies. I do have more sugar free cookies posted and have cookie recipes posted that use applesauce. Good luck
Healthy & Tasty Sugar Free Cookies
1 cup flour
1-1/2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt (optional)
1/4 tsp. nutmeg
1 tsp. ground cloves
1 tsp. allspice
1-1/2 cups raisins
1 cup unsweetened applesauce
1/2 cup oil
2 eggs
1 tsp. vanilla
1/2 cup chopped nuts
1 cup quick oats
Mix dry ingredients and add remaining ingredients to moisten. Drop by teaspoonfuls onto greased cookie sheets. Bake at 375 for about 12 minutes.

Many people crave a sweet and are on restricted diets. This is a great way to soothe that sweet tooth and not go overboard. My grandkids eat way to many sweets and this will be a healthier alternative for them too. thank you for the recipe.
