Coconut Shrimp (Camarones con Coco) INGREDIENTS: 2 cups coconut milk 1 egg, beanten 24 jumbo shrimp, peeled and cleaned 1/2 cup unsweetened shredded coconut 1/2 cup sweetened shredded coconut 1 cup all-purpose flour 1 tablespoon baking powder 1 tablespoon Adobo 1/4 cup corn oil Combine the coconut milk and egg in a large bowl. Add the shrimp and marinate for 30 minutes. Blend the remaining ingredients, except the corn oil, by pulsing a few times in a food processor. Drain the shrimp and discard the marinade. Dredge the shrimp in the coconut-four mixture. Heat the oil and fry the shrimp until golden brown on both sides. Drain on paper towels.

looks great :) thanks and for dessert,,,,, Mousse a la Banana This creamy dessert is low in saturated fat, cholesterol, and sodium, but high on richness. INGREDIENTS 2 tablespoons 1% milk 4 teaspoons sugar 1 teaspoon vanilla 1 medium banana, cut in quarters 1 cup plain low fat yogurt 8 banana slices (1/4 inch each) DIRECTIONS 1. Place milk, sugar, vanilla, and banana in blender. 2. Process 15 seconds at high speed until smooth. 3. Pour mixture into a small bowl; fold in yogurt. 4. Chill. Spoon into 4 dessert dishes; garnish each with 2 banana slices just before serving.

Jenny's Black Forest Cake SUBMITTED BY: REB_99 "This recipe is from a friend of my mother's. She used it for catering and has won the hearts of most who've tasted it. I've had to share this recipe with everyone who's been to one of my parties. Serve with whipped cream if desired." INGREDIENTS * 1 cup milk * 1 tablespoon vinegar * 1 3/4 cups all-purpose flour * 2 cups white sugar * 3/4 cup unsweetened cocoa powder * 1 teaspoon baking powder * 2 teaspoons baking soda * 1/2 teaspoon salt * 2 eggs * 1/2 cup vegetable oil * 1 cup strong brewed coffee, cold * 1 teaspoon vanilla extract * * 1 (21 ounce) can cherry pie filling * 1/2 cup cherry liqueur DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch cake pans. Make sour milk by combining milk and vinegar. Set aside. 2. Sift together the flour, sugar, cocoa powder, baking soda, baking powder and salt. Set aside. In a large bowl, whisk together the eggs, oil, coffee and vanilla. Stir in the sour milk. Gradually beat in the flour mixture, mixing just until incorporated. 3. Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow cake layers to cool completely before filling. 4. To make the cherry filling: Combine the cherry pie filling and cherry liqueor. Refrigerate cherry mixture until chilled, then fill cake.
