What have you put up and preserved from your garden so far this year?

I have frozen yellow squash and canned tomato sauce, dill pickles, pickled banana pepper rings, 2 kinds of salsa, and pepper relish. I plan to can some whole tomatoes and hopefully more salsa and pickles. What have you gotten put up so far?

The weather up here in western "Taxachussetts" was bad this spring and that along with my MRSA (a resistant kind of bacteria on my legs) kept me from planting as early as I wanted to. I have some egg plants coming along and the beans are budding up. some of the corn is about 4 & 1/2 foot tall, the pumpkins , I do not think that I will get any because they are only about 2 foot across (the plants) and have not blossoms yet. I should start getting tomatoes within 2 to 3 weeks. Not a good year for the garden this year up here. It sounds like you are doing everything right, Do you do organic or do you fertilize with chemicals?

I use Miracle Grow. I would rather do organic, but I just haven't gotten into it yet. I want to start some compost, but we are planning on moving soon, so I don't want to have to move a barrel full of yuck. LOL

We are not at the stage yet to preserve our goodies from the garden. We pretty much eat our fill when things first come in and then we begin to put things away for winter use.
How do you keep your squash from going squishy in the freezer?
I like to make a zucchini relish. I hope I find a new recipe for mine since I lost all my recipes in a fire.
Hubby really likes sweet dills and we do use alot of tomatoes in the winter. Making ketchup is a favorite of mine.

I have no idea how to keep the squash from going squishy. LOL This is the first time I've frozen it. But, I pretty much knew it would get squishy. I freeze it raw. I will use it in baked squash casseroles, so it doesn't really matter if it is squishy because it will get squishy anyway when I bake it. I've never had zucchini relish. But, I do like squash.

Every year I try to grow the largest garden I can. This year we are putting our house up for sale and so we put sod down. In our next home we are looking for a yard where we can have a large garden. I would like to be a lot less dependant on the supermarket.
