Does anyone have any Low Carb Recipes they can share?

Hi. My mom is a diabetic and REALLY does not eat the way she is supposed to. Does anyone have any low carb recipes you can share? I plan on compiling a low carb recipe book as a gift for my mom. Any and all help would be appreciated!
