Hi all! I am always on the lookout for a decent chicken salad recipe. Mine usually tastes like well, not so good. Anyway, I was on the Weight WAtcher website today, and found this recipe. It includes a dose of Benefiber--which is something I know I could probably use! :) Hope you enjoy!! Recipes from Benefiber® POINTS® Value| 4 Servings| 2 Prep Time| 10 minutes Cooking Time| 5 to 7 minutes Level| Easy salad| This classic salad can be served on a bed of baby greens, in a hollowed out red pepper or in the center of half a ripe papaya. Perfect for a chicken salad sandwich (just add POINTS values for the bread.) Almond Chicken Salad Ingredients 1 Tbsp slivered almonds 6 oz cooked chicken breast, skinless and boneless, cut into 1-inch cubes 1 medium scallion, finely chopped 1/4 cup finely chopped red pepper 2 Tbsp reduced-calorie mayonnaise 2 Tbsp orange juice 4 tsp Benefiber® (7 gm) ¼ tsp salt, or to taste ¼ tsp black pepper, or to taste Instructions In a small frying pan, toast almonds over a medium-low heat, stirring occasionally, for about 5 to 7 minutes; set aside. Combine chicken, scallion and red pepper in a medium bowl; set aside. To make dressing, in a small bowl, whisk together mayonnaise, orange juice, Benefiber®, salt and pepper. Combine dressing with chicken mixture and then gently mix in almonds. You can also sprinkle the almonds over each salad if you prefer. NOTE: Each serving contains one dose of Benefiber®.
