It's quite difficult to tell how to cook Chinese food. Because it's complicated. Though the dishes in restaurant tastes better, I prefer homemade Chinese disher.
I think the key of Chinese food is salt.
It's said Suzhou and Wuxi dishes tastes sweet, but if the qty of salt isn't fit, it will taste terrible. Actually salt helps season every flavors in the dishes.
In addition, I'm a Chinese, and I'm so glad you like Chinese food.

Tips when Stir-frying Vegetables:
When stir-frying vegetables, cook the toughest and thickest vegetables for a longer period than the softer, leafy vegetables. Vegetables such as broccoli, carrots, and cabbage need to be cooked longer than bok choy, which in turn is cooked longer than snow peas or bean sprouts.
If you are uncertain in which order to cook vegetables, simply stir-fry them separately. Never overcook.

One thing I never do is try and cook international food, I love Chinese and Thai food but I don't think anyone can cook like the Chinese and Thai Restaurants so I don't even try, they make it look so easy I know but home cooking just does not taste like theirs.
