Good Morning all it is a wonderful 5:30 am on Monday 8/20/07. I hope that you all had a wonderful weekend. It was a little bit cooler than it had been we were only in the upper 90's instead of triple digits. We actually had some sprinkles yesterday but not enough to do anything. Well I guess it is time for our weekly weigh in and lets be honest with each other that is what we are here for. I lost 1 pound this week. I was beating myself up for it but then I said "at least you didn't gain any" SO how did you guys do? ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Here is today's exercise. Upon request for some off of the floor I thought I would start a series called:The one minute workout plan. This is the first in the series. Bent-over Row Stand with a dumbbell in each hand, feet hip-width apart. Bend knees, flexing forward from hips until back is parallel to floor, arms hanging in line with shoulders, palms in. Bend elbows, pulling dumbbells in toward waist (shown), then straighten arms. Do 4 reps, then use hamstrings to stand up. Repeat for 1 minute total. Weight: 5- to 10-pound dumbbells. Strengthens back, rear shoulders, biceps and hamstrings ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Here is today's Healthy Recipe: Calorie-Trimmed Potato Salad Prep Time: 25 mins Cook Time: 20 mins Rest Time: 4 h Total Time: 45 mins Ingredients 3 pounds potato(es), round red, or Yukon gold 12 1/3 ounce(s) tofu, soft silken-style 3 tablespoon lemon juice 1 tablespoon mustard 1 clove(s) garlic, minced 1 teaspoon salt 2 tablespoon oil, olive 1 cup(s) celery, chopped 1 medium pepper(s), red, bell, chopped 3 egg(s), hard-cooked, peeled and coarsely chopped 1/2 cup(s) scallion(s) (green onions), sliced 1/2 cup(s) pickles, dill, chopped salt and black pepper milk, whole, or pickle juice Preparation 1. In a 4-quart Dutch oven place potatoes and enough lightly salted water to cover. Bring to boiling; reduce heat. Simmer, covered, for 20 to 25 minutes or until potatoes are just tender. Drain well; cool slightly. Peel and cube the potatoes. 2. Meanwhile, for dressing, in a food processor or blender combine tofu, lemon juice, mustard, garlic, and the 1 teaspoon salt. Process or blend until smooth. With the processor or blender running, add oil in a thin, steady stream. When necessary, stop processor or blender and scrape down sides. Set aside. 3. In a very large bowl combine cubed potatoes, celery, sweet pepper, eggs, green onions, and pickles. Add dressing, tossing lightly to coat. Season to taste with additional salt and pepper. Cover and chill for 4 to 24 hours. Before serving, add milk or pickle juice, 1 tablespoon at a time, to reach desired consistency. You can decide for yourself.:~P ~ If you like canned soup but think it's too salty - add a few chunks of cut raw potato before you cook it. The potato will absorb alot of the salt - remove it before eating.~ ~ To cook spagetti, thin spagetti, angel hair, etc.: use your fry pan. You put about 2-3" of water, heat it to boiling, and add the pasta. If the pan is a small one, you can break the stuff in half. This way, you only heat enough water to cook the pasta, instead of 4" you don't need.~ ~ Make your kids meals a little more exciting - Shape hamburger in a hotdog shape, fry in pan, and serve on a hotdog bun with desired toppings.~ ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Well, I hope that you enjoyed the post for today. Hmm... tofu in potato salad. I wonder if my hubby would eat it? I may have to give it a try. :) I've been stuggling this week with the weight loss. (I think I actually gained a pound!) I have been SOOO tired, and I think that the week's worth of pouring rain doesn't help. I guess I'm going to have to dust off the stationary bike to get some excercise. I did walk the kids to school this morning. (It stopped long enough for that 1/2 hour walk!) I'm hoping the clouds hold back until I can get them picked up this afternoon. It isn't much, but that will make 2-- 1/2 hour walks!

I know the feeling. I will probably gain this week as I have been sick and think I have a kidney infection so I have been drinking ginger ale for the upset stomach earlier and now cranberry juice for the infection. If it isn't one thing or another. I wish it would rain here it is sooo dry. I am sorry I didn't get the newletter out today. If it wasn't for having to get an email for my husband I would not be on here.
