How much is a large peg ?

When we go to good restaurants and order a large peg, it is supposed to be 60 ml. However random checks have prooved that the peg given by five star hotels range anything between 47 to 54 ml only. So we are firstly paying through our nose for a large peg in a good bar, and we are not even getting our moneys worth. Do people really have so much money to spend, that they dont mind ?
