Fooling a Picky Eater

My husband does not care for most fruits and vegetables,although he knows he needs to eat more of them. It is not the taste that bothers him so much as the texture. What are some inventive ways to sneak more of what he needs into his diet?

Veggies, puree or fine dice and put it into several things. You can also saute it and make it much softer instead of crisp. Try doing a salsa mix and this can work for either veggies or fruits, especially tomatoes, onion, peppers, and for fruits, apples, mangos, oranges, pears, plums. Sample Veggie Salsa: 1 to 2 tomatoes, 1/2 an onion or a whole onion, 1/2 to 1 of any color pepper (or all), clove of garlic or instant minced, [Optional: 1 jalapeno]. Dice/puree those. Olive oil can be added too but I'd recommend light amounts. Broil or boil for 5 to 10 minutes or until the vegetables are soft and the salsa has consistency. Adjust according to your tastes naturally :) Sample Fruit Salsa 1 (Multi): 1 to 2 apples diced, 1 banana (peeled and sliced ;p), A few strawberries, 1/2 tablespoon white or brown sugar, 1/2 teaspoon ground cinnamon and 1/4 teaspoon ground nutmeg. Blend together or if you want something finer then puree. There is no need to cook it but thats your call. Sample Fruit Salsa 2 (Mango): 1 to 2 mangos, oranges or mandarins. 1 kiwi, 1 pineapple. 1/2 tablespoon of white or brown sugar (probably wont need it). Dice or puree, no need to cook. Fruits can be diced, slow baked in an accompanying sauce, usually one of flour, brown sugar and cinnamon or honey depending on your tastes. Kind of like a pie filling (or just make it a pie lol). Just use about a 1/3 cup sugar and spice and tablespoon of flour and tablespoon of your spice or spices of choice. Mix and bake that with your sliced veggies on 350 for about 45 to 60 minutes depending on how done you want them. Veggie options Hamburger Meatloaf Baked Potatoes Mashed Potatoes Hash Browns Breads (as toppings) Tomato Sauces Chili Curries Fish or chicken casseroles, use whatever cheese or sauce Onion Soup or in some soups in general Scrambled or fried eggs Omelettes Rice Potato Pancakes Pasta sauces Fruit options - mix them well and put them in some of these Steak or Pork - especially if you use the 2nd fruit salsa in this listing Shrimp and other seafood - good with lemons, limes, even oranges if done right Breads Yogurts Cakes Fruit Pies Applesauce (if he doesn't mind it) Rice, again - at least thats my experience Long list. The salsa recipes all sound yummy! Thanks for taking the time to post them. I will have to try them out. He probably won't care for the veggie type, he doesn't care for tomatoes, but might eat the fruit ones.

i cook string beans with squash with coco milk. my kids love it really but they only eat the string beans. the next time i cooked it i mashed the squash and they thought i didnt put any squash. they ate it but didnt realize they ate the squash. i also do that on carrots. i boil it then mashed it before putting it in what ever dish i cook.

i also put diced veggies on burger patties or on meat balls so they wont notice. try it

You can always puree them and mix them into anything you make that uses ground meat. Meatloaf, meatballs and hamburger patties for example. You can also put the puree into spaghetti sauce. Is it cooked texture or raw texture that he doesn't like? A lot of vegetables are really good raw if he doesn't like them cooked. More "unusual" ones that I've had in salads are zucchini, peas, green beans, lima beans and corn. Years ago I was with a guy who would only eat a handful of vegetables -- potatoes, carrots, broccoli and lettuce. I used to sneak spinach into chicken soup (I chopped it up and said it was parsley) and I'd take just about any white-ish vegetable, steam it and mash it into mashed potatoes. He never knew the difference.

He will eat carrots, cauliflower and cabbage raw. He likes corn, peas and butter beans cooked, mashed potatoes, potato soup and french fries but doesn't care for baked potatoes. That's about it. I never thought about sneaking them into meatloaf; he will eat that.
