What's the hottest spice or peppers that you cook with?

What's the hottest spice or peppers that you use in your cooking? Do you use any milder spices or peppers that provide just as much flavor without the side effects? The other day I made home-cooked chili for the first time in four years. And, it tasted pretty good, considering that I wasn't actually following a recipe. Mostly, I know how to make chili by heart, so it wasn't so hard to do. But, I did notice that the spices didn't agree with me. I suffered heart burn for hours afterwards! Must have been the spices. Mostly, the hottest spices that I use in my cooking are hot peppers and cayenne. So, I guess those will be out in the future. I'd really love to find a milder hot spice or pepper to use in chili and other dishes. Preferably something with flavor that won't cause heart burn.

I don't like the hot peppers. I prefer the mild peppers and add them to a lot of my chicken and beef recipes. They are so wonderful. My preference is to add them to a dipping sauce made with mayo and sour cream.

i do the same thing i love to add them to my chicken and beef dishes,it gives them such a great flavor,i use the mild ones too because of my babies,i dont want them to be in schock if its too hot.they do enjoy all the dips though,and they like salsa.pattie

I can't have anything hot or spicy but Hubby loves for me to put Jalopeno's in his food. I also add cayenne pepper in his...he loves it. **AT PEACE WITHIN** ~~STAND STRONG IN YOUR BELIEFS~~

My partner loves to cook curries and has used Scotch Bonnet Peppers in meals. I can honestly say *don't do it* as they are far too powerful for me LOL

Hi there. We are a family of dishes used with mild chillie or curries... We like to enjoy our dish, not burn ourselves lol... Although some people cant even taste the really hot curry dishes and will often call them mild...

i really don't like hot spicy dishes. once in awhile i use a little cayenne pepper and jalapenos, but less in quantity as what the recipe calls for.

I use habanero and Scotch bonnets- but these are way too hot for the average person- You might want to try bell peppers, they are sweeter but with flavor. We don't like terribly spicy foods so I occasionally just use a little chili powder or red pepper flakes for chili, dips, sauces (including pasta), and stews.

I don't use any hot stuff, or very strong spices when I cook. My son will eat just about anything we eat now, but I don't think he is ready for a bunch of hot stuff. He does like salsa, but I only let him have a little bit. That's about as spicy as it gets for him. So probably just black pepper is the worst we use in regular cooking. We use a lot of other spices that aren't hot at all. We still good flavor, but no one gets heartburn (ever since I was pregnant with Elliott, I get heartburn anytime I eat anything that is mildly spicy)., and I feel like I am offering my son healthy, safe food.

Hi Beautyqueen! I don't usually use peppers in cooking, as the poor Iowa farm girl in me, doesn't like things TOO spicy! LOL! I will tell you, though, that a surprising kick that I used in fajitas one time were Anaheim Peppers. I grew these this summer in my garden, thinking they were banana peppers (a real mild pepper.) No, they weren't! They are not as hot as a jalapeno, but they definately have flavor. I really enjoyed the fajitas that we made with them. Just enough sizzle to wake up to flavor of the other stuff. I've got a few extra... want me to send some to you? :)

I don't actually cook with any hot spices or peppers. My husband likes spicey but not hot. With me.. the hotter the better. So after the meal is cooked, we add our own hot sauce or peppers to our own taste. I love jalapenos and hot cherry peppers so I always keep a jar or two around.
