Scalloped Potato Recipe or Suggestions?

Doe anyone have a favorite recipe for potatoes or scalloped potatoes? We are really looking for a good recipe because the boxed ones aren't that great to me. Do you have any other good potato recipes?

I make it by simply cooking the potatoes, then slicing them, covering with a cheese sauce and putting any additives you like, such as spring onion, bacon, capsicum. Then sprinkle a little cheese on top and grill till browned and warmed through. I have tried many recipes where the potatoes are put in raw and cooked in the oven but for me they never cook properly in the required time so I precook them.

Actually my mother in law gave me a delicious and EASY recipe for scalloped potatoes. You cook them in an iron skillet if you have one, if not any kind of dish will do. Wash, peel your potatoes. Slice them into thin slices, not necessarily thin thin, but thin slices, chop some onion, you will mix up milk with salt and pepper to taste, layer the ingredients into your pan, potatoes, top with onions, sprinkle a little flour,dot with butter, keep layering with this until near the top or about 3/4 full, pour milk with salt and pepper on top of that, it should almost cover the potatoes. Cook in over @ 350 degrees until tender. They are very good. You can put some cheese in the mixture if you want too, mozarella or cheddar is good. My hubby doesn't like cheese so we don't use it. Let me know if it turns out. I will look tomorrow in my recipes and make sure I quoted it correctly. Makes me hungry, I haven't made this in a long long time.

Here is a recipe that was give to me a few weeks ago, though I have not tried it yet. CHEESY SCALLOPED POTATOES 1 1/2 c. skim milk 2 tbsp. all-purpose flour 1/2 tsp. salt or seasoned salt 1/8 tsp. pepper 1/8 tsp. garlic powder 1/2 c. chopped onion Nonstick spray coating 4 med. potatoes, peeled and thinly sliced 1/2 c. shredded Cheddar cheese (2 oz.) For sauce, in a small saucepan, stir together milk, flour, salt, pepper, and garlic powder, if desired. Cook and stir over medium heat until thickened and bubbly. Stir in onion. Spray a 1 1/2 quart casserole with nonstick spray coating. Place half of the potatoes in the casserole. Top with half of the sauce. Repeat layers with remaining potatoes and sauce. Bake, covered, in a 350 degree oven about 65 minutes, or until potatoes are tender, stirring once. Remove from oven and sprinkle with cheese. Cover and let stand 1 to 2 minutes or until cheese is melted.

SCALLOPED SWEET POTATO CASSEROLE 6 medium sweet potatoes 2 medium onions 2 tablespoons vegetable oil salt 2 tablespoons butter 2 tablespoons all-purpose flour 3/4 teaspoon ground ginger 1/4 teaspoon pepper 2 cups milk 2 tablespoons chopped parsley In 5-quart saucepot over high heat, heat unpeeled sweet potatoes and enough water to over to boiling. Reduce heat to low; cover and simmer until sweet potatoes are just fork-tender but not soft, about 20 minutes; drain. Cool sweet potatoes until easy to handle. Meanwhile, slice onions 1/4 inch thick. In 12-inch skillet over medium-high heat, in hot vegetable oil, cook onions and 1/4 teaspoon salt until tender, stirring occasionally. Preheat oven to 375°F. Grease 13" by 9" baking dish. Peel sweet potatoes and cut into 1/4-inch thick slices. In bottom of baking dish, arrange one-third of sweet potatoes; sprinkle with half of onions. Place half of remaining sweet potatoes over onion layer, then top with remaining onions. Arrange remaining sweet potatoes over onions. In 1-quart saucepan over medium heat, melt butter; stir in flour, ginger, pepper, and 1 teaspoon salt until blended; cook 1 minute. Gradually stir in milk; cook, stirring constantly, until sauce boils and thickens slightly. Pour sauce over potatoes in baking dish; sprinkle with parsley. Bake 30 minutes or until sauce is bubbly and mixture is heated through. If you like, broil 1 minute to brown top of potatoes slightly. Makes 6 accompaniment servings. Serving Size: 6
