What to do with all this chicken?

My mom works for a food company where she's able to get 5 lb boxes of chicken for rather cheap prices and this really keeps us well versed with food. I'm at college right now and she brought us two huge bags. One is seasoned wings, which are in the freezer but that's not my problem. She also got us a huge bag of breaded chicken fillets. They're boneless and work well for sandwhiches and what not but I'm starting to get tired of sandwhiches.
I'm looking for easy ways to make the breaded chicken more interesting. So, does anyone have any pre-breaded chicken recipes? Or does anyone have any ideas on other ways to use it so I'm just not using it for the same thing all the time.

You can make chicken parmesean with them. Just give the patties a quick fry in olive oil to crisp, put them in a baking pan, top with spaghetti sauce and mozzarella cheese. Bake 15-20 minutes at 350 and serve it on top of spaghetti.
You can also cook the chicken and top it with gravy. Maybe serve it with mashed potatoes, corn and biscuits or something.

That's a good idea. I actually thought about doing that, but I wasn't sure how well it would work out since they're pre-breaded. However, I really don't think it matters as long as it get's used up.

You could cook them then slice them and have them in a salad,or put them into a wrap.You could make a country gravy for over the top and have chicken fried chicken with mashed potatoes. Now I'm hungry for chicken.

I actually was considering the salad or wrap option. Because they cut up so well, it would be easy to toss them in a salad or a wrap. It's a quick snack really.

My client eats them just as any meal. Yesterday I served it with stuffing, cranberry sauce & green beans. A lot of times I serve it with potatos & some green veggie.
I can't eat them because of the breading, but my client eats them a couple of times a week, they are easy for me to fix & she finds various ways to enjoy them.

Well, here is a really quick fix idea. Go buy some pizza crust dough, and a jar of roasted garlic alfredo sauce, and shredded cheese. Get your pizza dough ready, top with some of the alfredo sauce, cut up the breaded chicken and toss on top of the sauce, top with cheese... Additional toppings as you want, tomatoes, bell peppers, mushrooms, and the such. Made this for my kids, the pizza was gone before I got a slice, had to make another one...

My family's favourite is chicken, stuffing and mayo paninis. I take a lot of short cutd when cooking. Cut the chicken into strips and put them in a panini roll or even a plain bread roll like I do (because of a tight budget), put in the stuffing and mayo and grill them on a sandwhich maker or a george foreman grill. They are gorgeous. And sometimes you could cut them into thin strips and toss them into a mix of basmati rice and steamed vegetables, and add a sauce like sweet chilli sauce, curry sauce, or even a ceasar dressing.
