3D2N stay in HK!

HI guys! I am recently planning an HK trip for me and hubby plus my son. I want to visit Disneyland for the second day and an overnight stay at the Disney hollywood hotel. But for our first day and first night, i would like to see the HK downtown, with malls and sights to see. where in HK or Kowloon side can we check in? and the nearest hotel to the malls and the MTR?
