Using Celery!!

I just wondering if anyone USES the Green LEAFY bits of the Celery?? I was chopping up veggies for our Chilli tonight and wondered if u could use and or would use that bit of the Celery! (??) and IF U DO .. in what and what does it taste like or MAKE it taste like?? AND.. IF u DO use it whats the Recipie?? .. PLEASE! :) XX Just curiouse lol

I don't know exactly how it will work in your chili, but I will say you might as well use it rather then waste it.

Here's something. Puree/lightly puree and mix it: with tomatoes, bits of bacon (or pepperoni or sausage) a good amount of ricotta cheese, some Mozzarella/Provolone, and a little cream or milk. Add basil for a little extra seasoning. With that puree you can also add a little broccoli or spinach along with your leafy celery or as a substitute. Use the puree mixture on your favorite bread as an open face or sandwich or as a dressing, or even as a side item. For your chili, just chop it up, dice it up or puree that and put it in the mixture. It also complements gumbo a bit. Though in both cases I would add a little more spice because you don't want your chili or gumbo tasting too veggie :D Hope that helps Bizmom.

Diced onion can also work with my above mixture. Puree most of the ingredients you want to become a thick dressing/sauce and if you want some ingredients as small bits add those in later and mix those in.

I make it from time to time Bizmom. I just cook a lot of things and think of recipes even more. I do hope your party enjoys it, but be sure to fix up a personal/sample size so you can get the proportions down right. Oh and if you use it for a sandwich or bread dressing, the idea is to use toasted or thick bread like Ciabatta. Have a wonderful time trying these out Biz :)

oh yeah! i would have of course buti have sort of picky girls - WHATS THIS and a million and one other questions before the even TRY anything! :( *sigh* me & hubby on the other hand will try anything once atleast lol Thanks for replying :) XX

If I am using the celery in soups,stuffings or things like that I use the celery tops too. If I am cutting celery sticks for a veggie tray I just toss the tops.

yeah thats what i always did too and i was thinking wow! theres got to be SOMETHING to do with them:) lol i got some great ideas here . maybe u can try some as well :) u make something and i will and well taste test it :)xx lol thank u for ur reply xx

I chop the tops and leaves and freeze them in a plastic tub I have just for them... pop the top and either throw in or take out a handful! Absolutely use for soups and stuffing... the flavor is more intense that the celery ribs. I do the same with peppers and onions, so I always have them handy!
