In all honesty, I do not really know how to make yemas and polvorons, lonely_f16. Nevertheless, I luckily came across a couple of very interesting websites that could truly help in answering your questions. http://www.seasite.niu.edu/Tagalog/Tagalog_Default_files/Philippine_Culture/pagkaing%20pilipino/panghimagas/Polvoron.htm provides the following ingredients of a Polvoron (milk candy): 1 c All-purpose flour, un-sifted 1/2 c Butter or margarine 1/2 tsp Vanilla extract 2/3 c Powdered full cream milk 3/4 c Granulated sugar For the procedures, on the other hand, the same helpful website states: 1. In a pan, toast flour over low heat until brown. Set aside. 2. Melt butter or margarine. Add vanilla extract, and mix well. Set aside. 3. Combine toasted flour, powdered milk and sugar in a bowl. 4. Pour in melted butter. Mix well, making sure that butter is evenly distributed. Let cool. 5. Mold using 1/8 c polvoron mold. Variation: Mix 1/3 c of any of the following ingredients with cooled polvoron mixture: toasted pinipig; crushed cornflakes; finely chopped nuts. In regard yema's ingredients, on the other hand, http://anafilibini.blogspot.com/2007_06_01_archive.html provides these ingredients: oil, condensed milk and white sugar. For the simple procedures to follow, the same blog enumerates: 1. Heat up the pan on low fire. 2. Put on a tablespoon cooking oil. 3. Pour the condensed milk and stir. 4. Stir, scraping the sides and bottom of the pan to prevent scorching. 5. When it thickens, turn off the fire and let it cool for five minutes. 6. Place the white sugar in a bowl 7. Using the laddle, get a small chunk from the pan. 8. Form it into a ball using your hand. 9. Drop and roll the yema ball on the white sugar. 10. Repeat for the remaining mixture. I hope that my post could actually be of help to you, lonely_f16. Happy myLotting and enjoy eating your polvorons and yemas!
