Quite a few people I know have said that eating locally-produced raw honey is good for combating allergies, because by ingesting small amounts of pollen you gradually build up a resistance to it. I've never tried it personally, but other people I know have and swear by it. Does anyone else have an opinion or an experience with this?

I have not had experience in that matter. We buy honey but usually it is the cheapest raw honey we can get a hold of and the one that keeps liquid the longest, and most of the locally produced honey around here is rape seed honey (canola honey) that crystallizes easily. I love clover or other floral honey. I do not know the allergies that honey will protect one from.
My daughter-in-law is deadly allergic to celery and also almost deadly to carrots, oregano, and other herbs of the same family. I have a slight allergy to pine and a topical allergy to some soaps plus allergic to chemical based perfumes. And would like to know if eating honey will prevent or lessen the effects of these allergens.
