Cheap vegetarian cooking?

I am trying to cut costs when buying supplies for our vegetarian meals. We buy mostly organic foods since the tend to taste better, stay fresh longer and you don't have to worry about pesticides. The farmers market has closed for the year already. If I can get organic at the regular store, I will buy it but there is not a lot of variety and I usually end up going to Whole Foods. Any ideas?

I am not sure if you wanted recipes here for organic vegetarian cooking, or ways to purchase organic food. If the market is closed, then your only option is to buy from a health food shop, or some regular stores. I doubt whether you can get much in the way of organic food over the internet. It depends on where you live. You could try growing some of your own. Here is a nice, cheap vegetarian recipe: VEGETARIAN CHICKPEA PATTIES 2 15-oz cans chickpeas 1 1/2 cups quick oats 3 cloves garlic, minced 1 tablespoon chopped parsley garlic and onion powder, to taste (if desired) pinch freshly ground black pepper 2 to 3 tablespoons vegetable oil salt, to taste Drain the chickpeas and reserve the liquid. In a food processor or blender, process the chickpeas with 1/2 cup reserved liquid. If the puree is dry, add more liquid, a tablespoon at a time, to achieve a smooth, thick paste. Place the chickpea puree in a mixing bowl and add the remaining ingredients except the oil. Mix well, adding additional water or oats as necessary to make a mixture that keeps its shape. Shape into 8 patties. In a heavy skillet, heat oil and fry patties until golden brown on each side, for a total of 20 minutes or so. Thinner patties will cook in less time.

Look around to see if there's a food co-op near you. Many times you can get organic foods through those.

It might also be helpful to go to Asian or Indian markets if there are any in your area. Indian cuisine in particular has a wealth of vegetarian food, and these places are good for stocking up on essentials.
