Pumpkin seeds

Friday night after we carved the pumpkin my daughter-in-law and I thought seriously about saving the seeds and trying to find out how to roast them. Have any of you done this? Did you like them after you had them all done? We didn't know if it was worth the time and effort....any input?

I love roasted pumpkin seeds (or pepitas, as they're called in Spanish). I don't usually do them in the oven, though. I put a few drops of oil in a frying pan, dry off the seeds and sprinkle them with a little salt, and then cook them on a low heat until they turn golden brown. They taste a lot like popcorn, and I could eat an entire bag of them.

You can buy bags of them in Mexican or Hispanic grocery stores if you want to see what they're like (although the kind in bags are slightly saltier than I like them).

If you do them in the oven then you can also brush a little watered down honey on them right before they are done. We usually just roast them in a pan on the stove top. Doing it this way you just toss them with a little salt and oil, throw them in over a med. heat and watch them until they puff and mostly turn a slight golden color. Very good...

My step dad would roast them every year and OH are they good! good for you too he would take them and get all the wet stuff off of them and then spread them on a cookie sheet sprinkle them with salt and turn the oven on about 350 for about 20 min or until they where like a light golden brown. They are done when they puff up a bit too I'm not sure when it happens but you peel the white shell off and eat the green seed inside. I think you should probably look up the recipe onlne to make sure it' done right..LOL.-Amber
