I got a great deal on chicken breast. Boneless, Skinless Good Breast meat. It was $1.19 a pound so I bought a ton of it. Now I just need to find a way to use it up. I am a big fan of freezer meals so I figure I will be doing a lot of thoes. Does anyone have any great family friendly ways to use up chicken? ( frugal please )

Honey and soy kabobs? I have never heard of them before. I know my family loves meats marinated in soy sauce so this sounds like my family will love it too. Thanks. I think we will try this for dinner tonight.

There is alot of meals I can make out of it but I am not sure I can go through 40 pounds before it goes bad. I think I will just cut it into peices and freeze it that way unless I can think of new recipes.

I call it chicken goo - I use some chunks of chicken cut up, I throw in a can or 2 of the lowfat mushroom soup and some milk a bag or 2 or frozen vegetables. Then I make some bisquick quick muffins, that I cook like dumplings on top. I can't give specific amounts because I just eyeball it.

I love chicken and dumplings. It is one of my personal favorites. I think I will try this recipe with cream of chicken soup instead though because my hubby wont eat anything with mushrooms anywhere near it.

Uff that is really a lot of chicken.I can give you few ideas , how I am making mine. You can make it with pineapple and cheese.Or with ham, mushroom and cheese. Those are really simple you would just fry it on the oil for a little bit and then put the pineaple there and on the top cheese.the same with ham.Other what i make is I cut the chicken on small pieces and put on the pan with oil. Then add table spoon of honey and grated carrot.Cook for 20 minutes.hope I helped you a little bit.

I love grated carrots. I have never thought of this before but I think it sounds great. And it would look great too with all the color in it.

Hello happythoughts, Like your name!! Thas a hol lotta chicken!!!! Frugal meals, chicken casseroles, chicken and dumplings, chicken anything soup, and freeze into either one or two serving containers. Chicken anything soup, consists of your chicken and whatever vegetables you like to make a stock, onion, celery, green pepper, spices etc. Once this is made you can portion into smaller pans, chicken and broth, and add noodles to one variety, carrots and potatoes, to another, maybe a variety of canned beans, macaroni noodles and tomato to another. That way you have several containers of different soups made with chicken. Chicken casseroles, is the same thing, make several casseroles with different varieties of food, like chicken and noodles with frozen peas added for color, chicken and rice with green peppers or other vegetable maybe broccoli, or carrots. I like your idea of freezer meals. When I cook, I like to make enough for an extra meal or two, and freeze them. That way if I want a TV dinner, I just go to the freezer and get one that I have made and use it. Convenient!! I hope some of these are helpful to you.. Happy posting..

The chicken and rice sounds great. I love it when meals are so adjustable. I can make up a few different batches of them and let my family pick which way they want to eat it. Thanks. It was tons of help.

I am not all that great at fried chicken but I guess now is a great time to learn. I think I will go up and make some chicken salad right now because it sounds so good. Mmmm.
