I make mine with cornbread, celery, onions, giblets and lots of sage and we like it pretty well. I have a chicken I want to roast right now, though, and I'd like to do something different. What's your best dressing/stuffing recipe or method for chicken or turkey?

Before turning your nose up please try this because I have never been told they didn't like this stuffing. It's awesome but sound not so pleasing. I take dry bread chunks put them in a roaster then I used boiled hot water and I very sparingly (Only a few drops here and there) sprinkle the cubes, then I add chopped onion, salt, pepper, sage, raw hamburger and a roll of sausage meat, Mix this all together really good and stuff the turkey. It's real good Honest!!! Let me know if you try it and if you like it.

Oh, I wouldn't turn up my nose! I wanted ideas, that's why I asked! :) Does it take a very long time to cook this through?

When it's stuffed inside a turkey or chicken, I mean!

No, not any longer than it takes to cook the turkey. Just mix everything together stuff the dressing inside the turkey and cook the turkey. By time the turkey is cooked the stuffing inside the turkey will be cooked also. I've had people say yuck hamburger and sausage meat but it's the best dressing you'll ever make. If you've never seen the sausage rolls before you'll find them in the freezer they come froze. It doesn't usually take too long to thaw them out.

I cheat a little and use the already seasoned bread crumbs. But to those bread crumbs I add a couple cans of cream of celery soup, Cream of Chicken Soup, and cream of mushroom of soup. I add about a cup and 1/2 of broth, 2-3 eggs, and a cup of apple cider. I add finely chopped apples, walnuts, celery and onions. Due to the seasoned bread crumbs, I only add a little bit of salt, pepper and cinnimon. I pack my dressing in with my turkey to make it even more moist from the turkey drippings. When basting my turkey I baste it with butter and cinnimon, so My dressing baked with the turkey has a apple cinninmon taste to it. Can't wait until Thanksgiving, I love my turkey and dressing.

I usually pick up a package of stove top stuffing, but when I made it it was with bread crumbs, a little salt and pepper, sage, celery, onions, and a bit of red and green pepper. It was the regular dressing, but I also added a few extra spices because I really did not care for sage that much. I do not buy dressing any more and I have not yet found one that does not contain celery. We often have my son and daughter-in-law over for Easter and Christmas (not this time though) and she cannot eat anything with celery nor carrots in it.

For my dressing ?I break up stale bread into pieces and let set while I brown 1 pound of sausage. I add it to the bread. Then I saute onions and celery in butter until tender, I add them to the bread. I beat up about 4 eggs and add them to the bread. I add sage, salt and pepper. I then use my hands and mix it all together. If it needs more liquid I use chicken broth. I jus\t make it from a bullion cube. I then stuff my turkey. Everyone always wants the recipe after trying my dressing.

That looks similar to Grandmaof12's, except for the eggs, thank you! It sounds good.

I brown onions, giblets, garlic and mushroom in butter. I then add cubes of stale bread, sage, salt, pepper and a pinch of caynne. Let it all cool and mix well with hands. If it is too dry I add some chicken stock then I stuff my chicken. It is very good and my family loves it.
