When one right clicks on a file ones sees an option called “open with” which links to different programs which can be used to run the same file . In case I want to delete them, how do I go about it?

The option is there for a good reason and can be very useful. There are many files that cannot be opened natively but can be opened by selecting alternative programs. I personally find that notepad is useful for opening a vast variety of text based files even when Windows cannot recognise the format.
I would not recommend removing programs from this option, but it can be done by running regedit from the Run dialogue box and navigating to: HKEY_CURRENT_USER \ Software \ Microsoft \ Windows \ CurrentVersion \ Explorer \ FileExts \ .xyz \ OpenWithList which is where the information is stored.
