perceiving and reacting to sound

What happens physiologically when the human ear perceives and how we can react to a sound? What is the physiological mechanism involved when we hear, analyse a sound and react to it by being able to tune in and create a harmonic to that sound (vocal or other sound) as a response. How is this connected with the "musical ear" skill?
