why soup is always used as a starter?

I think soup is used as a starter because most people would want to sip something hotwarm to wet their appetite before starting on the main course.

I think more restaurants should serve large portions to have as a main course too. I often have soup or stew for dinner and just serve with salad and some wheat bread or corn bread.

I dont think so.It depends on your interest and mood.Instead of soup,for me water is the starter.
