I forgot about telling her to use an injector. I bought a injector last year and I have used it tons of times since don't know why I didn't get one sooner .But I think you should also try using a plastic baggy so that you just have to flip the meat over by flipping the bag and it also seems to marinate better in a baggy, for me anyways. I would settle for atleast 2-4 hours for fish and chicken but beef and pork and other meats do tend to take longer to marinate.

Maybe you aren't marinating long enough. In most recipes it is best to either marinate for a few hours to overnight to get the best flavor. I myself will take a fork and puncture holes in the meat so that the marinade will seep into the meat better, I marinate anywhere from 30 minutes to over night. Lawson brand has some great 30 minute marinades. You could also try to heat the marinade to warm and then try it also. Chicken and fish are usually the easiest to marinate for me anyhow. I would try the poking the holes into the meat and see how it goes for you next time.

How long do you marinate? I think fish should be marinated for a half hour to 1 hour.

The only thing I can suggest is maybe try making some small slits in the meat or poke it good with the tip of a knife so that the marinade can get inside it easier. I don't marinade often but when I do I generally put the meat in a ziplock, put the marinade in, seal it up and stick it in the fridge overnight. One way to bypass is use an injector. Another way is to poke with a fork about halfway through in a few areas to get it in that way. But most times recipes call for at least 3 or more hours of marinade time (many call for overnight). Also you can cook with a bit or some of the marinade so the flavor gets infused in the food that way (of course some recipes don't let you do this, but still its an option).

I may be way late on this i havent read all the responses yet either :( lol what we do is poke holes in the meat fish whatever to marinate it through and the longer u can marinatet the better! we marinated a steak for 24 hours and it was the MOST tender meat ever!! with roasts we slit little pockets in the meat and stuff it with garlic cloves! :) they also have these marinate injectors!! it sounds wonderful! Good luck XX
