I don't know for a fact, but I know some places do use it, but I'm sure they use goat's cheese in addition to other cheeses.
Do you not like goat cheese?

Im not going to say that i just dont like the liquid cheese thats on the nachos or the cheese dip

remember there is traditional mexican food and then there is more americanized american food, and "corporate-ized" chain food. Also, different regions of Mexico will have different spices and items. And with restaurants in the US, they are also going to use what they can easily source to keep the bottom line in mind and also to keep their dishes consistent with items that are readily available. In the big chains, you won't see goat cheese. And in fact, it has been pretty rare in the restaurants i have been in period, but i have not been to to many down home traditional restaurants.
