You could make a pasta type dish pasta is cheap. So is rice,Spanish rice is always a good choice. Chips and salsa if you just want finger food. Meatballs in barbecue sauce or polish sausage in sauerkraut is cheap and easy.Apples and caramel dip is yummy too.

I like your Spanish rice idea, especially since others are bringing Mexican. That would fit right in! You could also do a vegetable. It sounds like with all the Mexican dishes a veggie would be needed :) Good luck and let us know what you decide to bring and how the party went! Happy Holidays!

I have a yummy one! It's not low cal, but sure to be a hit! Double the following recipe for 20 ppl. It's cheap, easy and real quick! Baked Orzo Casserole 1 1/2 cups dry orzo, freshly cooked (orzo is rice shaped pasta) 1 1/2 cups Monterey Jack Cheese, grated 3/4 cup diced red bell pepper 1/2 cup canned diced green chiles, drained 1 1/2 cups sour cram 3/4 cups grated parmasean cheese 3 tbsp. butter Preheat oven to 450 degrees Lightly butter a 1 1/2 quart souffle dish Combine cooked pasta, bell pepper, jack cheese and chiles in a prepared dish. Spread sour cream over all and sprinkle with parmasean cheese. Dot with butter. Bake until golden and puffed (about 15-20 mins. Good luck with this. I've not met anyone who doesn't like it, and if the guests are vegetarian, it fits the menu!
