Jacket potatoes make a delicious and healthy base for a host of different meals from quick snacks and light luncheons to filling evening meals. By adding different fillings and side dishes the humble potato can be used repeatedly but with great variety. And given how inexpensive potatoes are you can creat highly nutritional dishes at extremely low cost. By the way, Make sure you use Kind Edward potatoes for these recipes.

My family loves the potato as you call it jacket potato. We call it the baked potato. When we go to the store to get potatoes we don't have a particular name for the potato beyond the type, such as red, white, purple or yellow, yukon. Most of the time they are just labled russet (for baking) or red.
