yumyum, more than dumplings, i have eaten momo. it's hard work but the food is just scrumptious. both are more or less the same i think. though there is a bit of difference with dumplings as the chinese use other ingredients. grins let me give you the recipe for the filling. you can use any meat you want of course or even vegetarian but i'll go with chicken. i like that best. the amount here will be enough for the two of you i guess, even more. 1. mix 500g minced chicken, 250g chopped onions, salt to taste, oil, and if you want meat curry powder together. you don't have to put too much oil. you can also put coriander leaves for the flavour too. mix them well and taste a little to ensure that the taste is there. 2. you should already have kneaded roughly around 500g of plain flour also. you don't have to mix anything here. but i hope you know how to fold cos i don't really know how to explain here. if not, you can make your own design. 3. for the tomato sauce,(well we have tomato sauce anyway) if you want those ketchup, by all means go ahead. but if you want to make, then grind maybe 2 chilli together together wih 500g or less tomatoes in the blender. add a little salt to flavour. 4. now make a small circular shape from the dough you kneaded and roll it flat. i hope you understand,it's hard to explain. 5. scoop a little of the mixture(meat) and put it in the dough that you rolled flat and then fold. just keep on doing the same with the rest. i hope you have the steaming dish; the one with holes if you get my idea. 6. put the uncooked momos there and steam it for about 15-20 minutes in the fire. when it's cooked, you should be able to get the aroma of the momo. to check it, the momo should be a little white yellowish in colour and when you poke with a fork, it should go in and come out smoothly. i hope you kind of get what i mean, since you're from india, hoping you know what i'm talking about. if not, grins, best of luck. hope others give you a better explanation. good luck
