we all get together at my parents' house for lunch almost every sunday. my mom makes a big meal and is different every week. she probably makes pasta dishes most often but sometimes baked rice dish, pizza, or soup and sandwiches. today she made baked beans, potatoes, macaroni and cheese, and soy sausages in bbq sauce. Whatever she makes, it's always delicious.

Well, today, we had such a late breakfast, I may not even make a lunch. Your lunch sounds good though. A traditional Sunday in Ohio may be pancakes or something like that for breakfast then prepare for a larger, early family dinner such as Chicken, mashed potatoes & gravy, a green vegetable of some sort and rolls or biscuits. A light lunch in between if the dinner is later may be (in my house anyway) a grilled cheese sandwich and tomato soup in colder weather, or in a warmer time of year, cottage cheese and fruit. Salads are always good as well. If we are trying to eat lighter, we may do the rice with steamed vegetables instead of the heavier potatoes and gravy. I have no idea what today holds, it's almost noon and my belly is still full from the eggs, toast and fried potatoes and fruit we had a couple of hours ago :) What about dinner in Nigeria or breakfast? What do you typically have?
