Skin on Or skin off?

When preparing potatoes to boil do you scrub them and remove the eyes, yet leave the Jackets on... or do you peel them and slice them into the water? OR does it depend on what you are planning to make with them? my mother always boiled them with the jackets on when making potato salad - and we would play hot potato getting the skins off - but when she made mashed potato or just boiled taters she would peel the skins first

It depends on what I'm using the potatoes for and how good the potatoes themselves are. i always leave the skin on if it is new potatoes. If my potatoes are older looking then I peel them. We prefer our potatoes with the skins on though.

right, which I can understand if you were considering whether or not to eat the skins - but she is peeling them before eating, in both instances... just with potato salad she will boil them with the skins on and THEN take the skin off before preparing the salad (russet type potato) her salad was always remarkably good.... I was wondering if boiling in the jacket makes a different effect on the potato starchiness or something.

All of the vitamin C in a potato is right under the skins. Unless the skins are old and tough (when they are suitable for jacket potatoes), it is a good idea to boil them with the skins on. If you then want them peeled (because the skins are unsightly), the skins will just slip off. Take each potato in a teatowel and apply either apply gentle pressure to pop them out or use a knife to peel off just the skin (leaving the vitamin packed layer just underneath). I generally mash potatoes with the skins on about half the time. I don't use a blender - just a good old hand masher. It breaks up the skins quite well and nobody has yet complained about 'wholemeal' potatoes! Since I often add chopped spring onions to the mash, it doesn't matter that there are brown as well as green bits in it. I believe that the skins add to the flavour, too.

that is weird.. why wouldnt she peel them first to make potato salad ? lol.. you'd think you'd do it one way for both things if you dont want the peels left on.. If i'm making soup i leave the peels on. If i'm making mashed, i peel them first. But i have seen people make mashed potatoes and leave the skins on.. weird.. i guess it'd be ok if you were using a blender! *smiles*

I have made them both ways. When I am making mashed potatoes I peel the skins off but if we are just having them boiled I leave the skins on. Or if I am baking them I wash them really good because we eat the skins too, that way. When I am frying them I sometimes leave on the skins too. So it just depends how I want to make them or eat them. They say all the best nutrients are in the skins so when peeling them you are throwing out all the good stuff.

peel or not peel thats fine with me, i went to Kenny Roger's restaurant they have a potatoe salad they cook and slice into cubes with skin on they put mayonaise which is taste good, well its on our way how to cook potatoes, but here in Philippines we used potatoes one of our ingredients like Chicken or Beef Caldereta and some of our menu, of course we peel off the skin of potatoes

I guess it depends on what I'm using the potatoes in but 9 times out of ten I scrub and remove the eyes. I like to keep the skin on because I like the flavor (and the lack of waste) :)

I most always leave the peelings on my potatos as the peelings are rich in fiber and minerals. I wash/scrub the potatos very well and remove the eyes. I even leave the peelings on when I am going to mash the potatos. Many restaurants are now doing this too. I love french fries with the peelings on them. (we bake our french fries) Yup, I can't remember when I last peeled a potato!

Depends on what I'm cooking, some things are better with skins than they are without them...and in other meals they're gross with them on. So it really just depends.

Unless we are talking about potato wedges, it is definitely skins OFF. I think the skin is packed with some good stuffs but it looks dirty lol. I will only eat it outside when supposedly cooked properly by restaurants. :P

I do the same. The jackets come off for mashed potatoes and for potato salad they stay dressed! LOL....

It really depends on what i am making. When I want to do pasrty i would just put whole potatoe to the water and boiled them. If they have eye i would remove them, since it is not healthy to cook them with it. If i want potatoes just to serve on the plate with meet, i would peel them.

I leave the skins on so there is more fiber in the dish! Scrub them first, then use them the same way for a recipe, just leave the skin on instead of peeling it off. It does not have much taste, so it is not something most people will complain about!

Well, honestly, first I scrub and clean them and then I boil them with the skin on. Why? Because I find that the peels come off very very easily after being boiled. In fact, they just fall off practically. It definitely makes my life easier!

I usually only use potatos for soups or to mash them. I peel them and slice them first. The cook faster this way. If your making mashes tatos all you have to do is put them in the bowl with butter and milk and whip them up. In soups I like to make sur the potato gets cooked so I slice it and peel it. By the time the soups done so are the tatos. I hate half cooked ones.
