do you bake yours inside aluminum foil or without? I do mine without, as the foil tends to steam them and render the skins too soft for my intentions. you see, one of my most enjoyable aspects of having a baked potato is the skins... my father taught me as a young child - to cut the potato in half crossways - scoop out the meat and fill both the shells with butter, salt and pepper.... oh man is that good stuff!

I prefer my potatoes baked out of foil. We rub ours with olive oil and roll them in sea salt before we bake them. I love the skins also. I cant believe people who just toss them out.

I love this idea about the olive oil and sea salt - will have to do it next time. I think the most nutrients of the potato are found just under the skin - so it is good tasting and good for us to eat it.

We cook potatoes without foil. Pick the skins with a fork, rub oil on the outside and put salt on the potato, place on the center rack. This makes the skin very crisp and seems to decrease the amount of time needed for cooking.

I will have to try that, oiling the skins, crispy sounds great!

I have baked my potatoes both ways. I like the skin to be nice and crisp so after washing them, poke the skins with a fork and put a large nail in the center to speed the cooking, rub them with olive oil and put in the center of the 350 degree oven. The secret to have good tasting baked potatoes isn't what you put on them or how they are cooked but in finding the right baking potato.

I usually bake them out of foil. Every once in a while I'll but oil and salt on them and then wrap in foil. I love the skins too and I hate to waste any food so I can't imagine throwing them out.

most of the time i do without-i usually only use the foil when i want to hurry it up a little bit. my mom used to use "potato nails" for the same reason.it looks odd,but it does seem to heat the inside a little faster though. oh 'tato skins-try it with some ranch dressing mixed in. you'll love it :)

wooooooooo ranch dressing! and maybe some chives and um, bacon crumbles too! I made some last night after this discussion and did the oil and sea salt thing - they were really good, didn't need to put anything on the potato before eating, such a nice nutty flavor to it.

I like the skin on and sometimes do like your dad only mash the meat of the potato and then put it back in for twice baked potatoes. I do like eating a nice clean crisp skin!
