Lenten season is fast approaching. This simply means that meat is a no-no for this season. What dishes is best for this season? Care to share yours?

I like to make vegetable stir fry...frozen mixed vegs, garlic, onion, soy sauce, and oil.
I love veggie stews, especially with lentils and potatoes.
I make beans and rice too and pasta with marinara sauce.
It's not hard for my family because we're vegetarian :)

Your vegetable stir fry sounds similar to mine. I like to use sesame oil for the flavor it adds. A little bit of fresh ginger is good too. Usually I sprinkle sliced almonds on top or throw in some cashews while it's all cooking.

Beans and rice, spaghetti, bean and cheese burritos, vegetable soup, roasted vegetables, meatless chili, angel hair pasta with pesto sauce, pita sandwiches with veggies and hummus, etc. What type of foods do you like?
