There was a middle eastern or Mediteranean Salad I had years ago at Grand Union

at the Sky Way shopping center in Plattsburgh. It had orzo, black beans, chicken, raisins and tons of other stuff. I used to love it so much. I would get some every week. But then the GU went out of business. I have tried similar looking salads, but none as good as that one. Anyone else know a salad like that and what ingredients it has? I miss it, it was sooooo good!

I found this recipe. It sounds delicious...I might have to try it and just leave out the chicken (I'm vegetarian). 6 servings Nonstick cooking spray 1 pound boneless skinless chicken br*ast 2 1/2 cups zucchini, sliced and quartered 2 cups red bell peppers, sliced 1 15 oz can black beans, rinsed and drained 1 4 oz. can mandarin orange sections 8 ounces orzo, cooked and cooled to room temperature 1/2 cup dark raisins Citrus Vinaigrette 1/4 cup balsamic vinegar 3 tablespoons orange juice 2 1/2 tablespoons lime juice 2 tablespoons honey mustard 2 tablespoons olive oil 1 green onion, thinly sliced 3 cloves garlic, minced 1/2 teaspoon dried basil leaves 1/2 teaspoon dried oregano leaves 1/4 teaspoon salt Spray large skillet with cooking spray; heat over medium heat until hot. Add chicken and cook 10 to 15 minutes or until well browned and longer pink in center. Cut chicken into strips or cubes. Combine chicken, zucchini, bell pepper, beans, mandarin oranges and orzo in a large bowl; drizzle with vinaigrette and toss. Cover and refrigerate at least 2 hours or overnight. Stir in raisins just before serving. Season taste with salt and black pepper, if desired. Garnish as desired. For Citrus Vinaigrette Combine all ingredients in jar with tight-fitting lid.

Don't think there was zuchini or mandarin oranges in it, but the rest sounds right. The dressing sounds really, really good. Thanks I'll have to try this as soon as I get more money for food. I think it would be just ast good vegetarian. I hoope you try it too because it does sound great, doesn't it? Definitely have to try the dressing!

Its all in the dressing... try checking out cooks.com... they'll probably have 20 different recipes, but you'll get closer than you are right now!

Thanks, I like cooks.com Dressing I think I have figured out, I had another recipe that was close, Balsomic vinegar and olive oil. Varied it and it tasted like the dressing. Take care
