homemade egg noodles

Does anyone have a really good and simple recipe for homemade egg noodles? I usually use 2 eggs 2 cups of flour and 2 TBS of milk. It used to work real nice for me but now when I try it the dough seems too dry and won't spread the way I need it to.

It is probably because of the weather. I made a pie crust the other day and it did not roll out well either. My pie crust usually turn out great. In dryer weather you will need more liquid and in very humid weather you will need less liquid.

Are you using the right kind of flour. When I started making them there was just 2 kinds of flour. all purpose and cake flour. now there is all purpose and self raising and bread flour. when I was learning to make noodles and they were as you described my grandma said to add a little water. It could be the size of your eggs too. Hope this helps

When I make homade egg noodles for my family .I use 1 egg per person and 1 cup of flour per egg. add salt and pepper mix together if it is still kind of sticky I add more flour until it is the right texture for noodles
