Looking for ideas for using up Butternut Squash

I know that you fabulous cooks here will be able to offer me some ideas! I have just checked our stores & realised that I have quite a few Butternut Squash that need using up. What can I do with them that will make the most of their lovely flavour? I really enjoy making a butternet squash and sweet chestnut soup, but it's not the season for chestnuts and I have run out. I have a friend who suggested I make a cake with them. I'v eno idea how you'd do this though. Would I make it like a pumpkin cake? What's your favourite recipe? It would be nice to try something different tomorrow as it's Easter SUnday.

i make a great butternut squash soup. First of all i cut the squash lengthways, hollow out all the flesh, discarding the seeds. Then i fry this pulp with onion and garlic, a little salt and pepper. After five minuits, transfer the whole contents of the pan to a blender and blend for a few seconds. Transfer to a pot and add half pint of water. Bring to the boil, add lemon juice, corriander, cumin and fresh ginger. Boil for 5 minuits and serve with crusty bread blessed be

I make a butternut soup, without any chestnuts. I bake the squash first, then scoop out the flesh. I simmer that in chicken stock, enough to make a good soup consistancy (I'm not a big fan of measurements). I keep the spices simple, some nutmeg, sage, salt & pepper. After it's simmered in the crockpot on low for most of the day I add about a half to 2/3 of a cup of heavy cream. I bet it would make a good pie too. Try making it just as you would a pumpkin pie.

Thanks Eden. I've not tried baking the squash before turning it into soup. I'll try it & see how it alters the end result. Thanks for the tip!
