Do you like facy cheese? What kind is your favorite?

I love fancy cheeses. I like pretty much every type of cheese that I have ever tried but I would have to say that if I had to pick a favorite, it would be Brie. I love both brie and camebert cheeses. They are expecially good if you heat them up just a little bit in the microwave, it gives it a little more flavor, being warm and the center has a very nice texture when slighty melted. What is your favorite type or cheese and your favorite way to eat it?

There's a type of cheese here in Wales called Green Thunder that is to die for!
It's kind of like a really mature cheddar, but with garlic and herbs in it. It's so gorgeous, everyone that's tried it here has loved it!
I could eat it with everything!

I'm Danish, so I think the fact that I appreciate good "fancy" cheese goes without saying. I love all kinds of Danish cheese, and French brie, and all kinds of other wonderful kind of cheeses. I could never get sick of eating cheese.

There is an Amish cheese store in our local mall. We have bought a Horseradish cheese that is great. We have also bought a Green Onion cheese that is wonderfuul. I do like the taste of Gouda though.
My favorite cheese is Colby Jack cheese. I like it any way that I can get it. It is a high moisture cheese.

There's a good cheese counter at a super market right near me where you can cheese with fruit and things in it, they do one with apricots and one of my favorites is the one they do with peppers. I do like cheddar a lot it's the main cheese I eat but I also enjoy Brie and cream cheese, and I like a bit of stilton every now and then.

My favorite common cheese is Colby Jack cheese. My favorite not-so-common cheese is Gouda. I can't remember the last time I had some Gouda though. I'll have to put that on my shopping list. I like the soft cheeses the best, but an occasional cheddar is good too. I've never had Brie, but I've heard that it smells really nasty. I don't think I could eat it, but I would at least try it.

Let me see now. I also like Brie and I must try to follow your suggestion to warm it up a bit. Apart from that I love pretty much most cheeses except Limburger. It is very stinky.
Quebec has absolutely wonderful cheeses, I can't name them all but Oka cheese which was produced my monks (I don't know if it still is)is one of my favourites
I like to eat cheese:
warm apple pie with a slice of old cheddar
Brie cheese with cranberries (I had that once in Europe and I think the Brie was deep fried)
Soft goats cheese broiled on fresh figs
Peccorino (hard sheep's cheese) with olives and whole grain buttered bread.
Fruilano cheese and walnut halves
Grilled cheese sandwiches, made with real cheddar and pickles at the side.
Cucumber and cream cheese sandwiches made with Western type cream cheese (it is not as compact as Philadelphia cream cheese)
Mascarpone cheese in any type of dessert
I could go on an on, but I guess by now you know I love cheese.
