Quick, easy and healthy lunch ideas anyone ?

My daughter is pretty picky when it comes to eating. She is a CARB JUNKY! she will eat anything high carbs like rice, pasta, that sort of thing, and anything high in salt, but i'm trying to get her to try new things and eat healthy. . veggies always need to be dipped in ketchup for her to eat them!! Anyone have any good ideas to share with me, i'm running out of things to try and am open to suggestion of any sort ;)

Why not incorporate carbs with other things? For example, make a pasta salad balanced with protein and veg. Grill some chicken, and chop it into pieces, chop up a pepper, and open a can of sweetcorn. Mix the whole lot together with a tomato pesto sauce and as much or as little pasta as you like. Ta da - my husband loves this for a quick meal!

That sounds good! my ex used to call me icequeen lol thanks for that memory. I bet she will pick the pasta out and leave the rest behind. lol I will give it a go though. we havent tried pesto in a few months. . she loves reg speg sauce and alfrado, i'll give the pesto a shot.

Hope you get on ok. Another things I sometimes do is make my own pasta sauce with fresh tomatoes. If you chop them fine and add some finely chopped onions and garlic, and use this as the base for your sauce, she will get all the benefit of the tomatoes.

My granddaughter that is almost three is the same way...everything has to be dipped in ketchup before she will try it and the only veggie she really likes is corn. But I think as they get a little older they might be more open to trying new things.....they make her try one new thing at each meal...even just taking a bite....

Thank goodness for mustard and ketchup! My 2 yo GD dips everything in one or the other. But hey, if it gets her to eat a variety of foods, I'm keeping ketchup and mustard handy!

Well, if nothing else , make sure you keep the ketchup you get at fast food so you can include those in her lunches! How about makeing a sandwich, but first, use a cookie cutter and cut a fun shape out of the bread and meat, then assemble. Even add things like nose and eyes with a chocolate chip or some little bit of candy to "entice" her to eat!

You could fry some chicken (chicken thighs, etc) with mushrooms, peppers, tomatoes etc and sprinle some barbeque flavour! It goes great both with rice and pasta!! But then again if she's very picky she probably won't like the mushrooms or the peppers...

lol i'm not sure about the peppers.. mommy doesnt like peppers so we rarely have them in the fridge. . But i loves mushrooms and your right. she wont eat them iv'e tried in stews and soups and rice. but she WILL eat the cream of mushroom soup if i mix it up with instant rice ;)

Or something like a cesar's salad with bits of chicken... Most people like that. Not exactly a lunch material but still gets you full and is pretty healthy
