I made this dish for supper last night. I was pleasantly surprised. It is cheap, easy and is also a great health recipe. If you try it - let me know what you think about it. This is for one serving.... In a skillet, add 1 tablespoon oil and 1 tablespoon butter. Add 1 cup baby spinach leaves, 4-6 sliced water chestnuts, 2 chopped green onions, 1/2 of a cucumber, thinly sliced, 1/4 of a red bell pepper sliced thin and 1/2 cup shredded cabbage. Salt and pepper and squeeze a few drops of lemon juice over the veggies. Saute' the vegetables until desired tenderness. Remove vegetables and set aside. Add another tablespoon of oil or butter, and place filet in skillet. Cook until done - about 4 minutes on each side. Salt and pepper and squeeze a small amount of lemon juice over the filet. Place veggies on top of filet to reheat. When fish is cooked through, place filet on plate and cover with veggies and a lemon slice. This recipe is very tastey and healthy. I hope you like it as much as I did.
