Great Pasta Recipe

Hi All -
I came across this recipe and thought I would share. I absoutly loved it. Let me know your thoughts if you try it and tell me if you would change any thing. Thanks in advance for reading and responding!
Penne Rapini
Makes: 6 servings
Prep: 10 minutes
Cook: 12 minutes
Ingredients
5 slices bacon
1 pound rapini (broccoli rabe)
1 pound whole-wheat penne pasta
4 garlic cloves, peeled and sliced
1/4 cup sliced pitted black olives
1/4 teaspoon crushed red pepper
1/4 pound sliced mushrooms
2 tablespoons extra virgin olive oil
2 tablespoons grated Parmesan cheese
Directions
1. Cook bacon in a large nonstick skillet over medium heat for 6 minutes, until crisp. Cool and crumble bacon; save drippings.
2. Rinse rapini; cut into 2-inch pieces. Blanch in a large pot of lightly salted boiling water for 1 minute. Remove with a slotted spoon; scoop out 1/4 cup water. Return remaining water to boiling; add pasta. Cook as per package instructions. Drain.
3. While pasta cooks, reheat bacon drippings and add garlic, olives, red pepper and mushrooms to pan. Cook 3 minutes, until garlic is softened. Add reserved water and rapini. Cook 2 minutes. Toss with pasta, bacon, olive oil and Parmesan.

I was talking to a friend about this receipe and she said to cook the bacon bits like you would cook regular bacon that way you get the drippings that are needed. You won't have to do it for long and will need to use more but it will give you the drippings that are needed.

Rapini, or Broccoli rabe as we call it at my house, is one of my absolute favorite vegatables! This looks like a great recipe for it too. For people who want to substitute another green, spinach would probably be good too, but if you can find the brolloi rabe, absoultely try it. It's great!
Here is another rabe recipe that I use (from the food network).
1 pound broccoli rabe, trimmed of damaged leaves
1 pound orecchiette or other pasta noodle
2 tablespoons water
4 to 5 cloves garlic, thinly sliced
1/2 pound Italian sausage, cut into quarter-inch slices
Salt
1 cup coarse, seasoned bread crumbs, toasted, optional garnish
Pecorino Romano or Parmesan, optional garnish
Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.
Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
While the pasta is cooking, place 2 tablespoons of water into a cold skillet with garlic and sausage and then turn heat to medium-low. Cook, stirring occasionally, until garlic is golden and sausage is cooked through, about 5 to 7 minutes. Pour reserved broccoli water into pan with sausage.
When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt. Pour sausage sauce over pasta and stir in cooked broccoli rabe. Taste and adjust seasonings. Serve immediately.

The funny thing is when I first seen this recepe I had to look up Rapini - I had no idea what it was lol. Anyway I don't know if cabbage would work or not, it really would give a different taste. Yes I may add onions next time, for me cooked I don't like raw onions. Try it and let me know...
Also a great easy cabbage receipie:
Cabbage
3 tablespoons extra virgin olive oil
Galic clove
Parm Cheese
Almonds
Salta the cabbage in olive oil and garlic until soft (to taste) add Parm cheese (again to taste) and toss, serve cold or hot, garnish with almonds.
