Potatoes are not the only root crops that make good fries. My favorite is Yampi. Also good are Dascheen and Yucca-Cassava

Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil. Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon. Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

It sounds like you are putting the fries into the oil before the oil is hot enough. You want you fries to cook in the least amount of time as possible this way less grease soaks through the fry. Let your oil heat up for a few minutes before you drop the fries in. Also if you are looking for a healthier way to make fries you could also put them in the open. You don't use any oil at all with this type of fry. you spread the uncooked fries on a non stick baking or cookie sheet. Than throw in the oven. Halfway through the cooking cycle just turn the fries.
