Addicted to Casseroles!?!

As I was writing a cooking discussion last night, I realized I was addicted to casseroles. Casseroles of any kind but in particular- potato casseroles. Casseroles are a great way to create something new, clean out your cabinets, and feed your family for a couple of days for very little money. What's not to love about that?? I'm always looking for new recipes for casseroles. So what are some of your favorite casserole recipes? Do you love them or hate them? Write your favorite casserole a love letter or share any casserole story you wish! Thanks for the responses and ideas that I will take from this discussion!

I have a slow cooker which i know is ideal for casseroles, but i dont really know any great recipes. I have brought the recipe bases from the supermarket before and added vegetables etc, but they all end up basically the same thing served with rice. Do you know any other ways to make them not so boring?

I have never made a casserole in a slow cooker. If I want to jazz something up though, I use seasoning salt, garlic powder, and whatever other spice I can find that would fit that particular dish. I'm generous with my spices as well which helps. I'm sure an expert Mylot god or goddess will come along and let us in on some ideas for slow cooker casseroles. Thanks for the response!

I like broccoli rice casserole and hamburger casserole the most. They are both really easy. I was making a casserole about once a week up until a few months ago. I don't actually have a recipe for either one. I just kind of wing it. The broccoli rice one has Velveeta, rice, broccoli, cooked sausage, cream of celery soup, onion, salt and pepper in it. Bake at 30 for about 30 minutes. The hamburger casserole one is potatoes, onion, carrots, ground beef, and mushroom soup layered in a dish with some salt and pepper on top. You then bake for about an hour covered and another 15 minutes uncovered at 350.

Ohhhh yummy! Thanks so much! I will check these out. I assume the beef is browned first? This may sound like a plan for dinner tonight!

No, when you add the gound beef to the hamburger casserole it is raw. That is one of the reasons it cooks so long. That and the potatoes. It is really good. I usually do 2 layers of everything and then put the mushroom soup on top.

I make casseroles about 2 or 3 times a month. depends on my mood. Everyone in my house loves my chicken cordon bleu casserole as well as my pierogie casserole. Both are very cheap to make and very filling.

I really like a chicken casserole!! yum yum! I normally buy the casserole sauce and add the chicken. A sausage casserole is nice for a change, depending on the sausages you use, depends on the flavour!! Mine are always served with rice, would love to find something else to serve them with instead! Im not normally one who does cooking so prefers the simple way to it which is why I use ready made sauces!! Might ahve to have a casserole this week now, my mouth is watering at the thought lol

I have never seen casserole sauce here or maybe I missed them. I would try it and see what they are like, though I like making my own. It would be great for most of my days when I don't have time. Thanks for the response!

Yeah I know but Im not one who enjoys cooking, I only cook on the odd days to give my boyfriend a break, plus we both work long hours so we need somethign quick and snappy to whip up and luckily the sauces are fab!!!
