Take them out of the paper package and store them in an airtight glass jar in a cupboard. Jam jars are good for this. The bay leaves will keep fragrant for a couple of years. So you have some on hand each time you make your bolognese. If you make your own vegetable or meat stock a bay leaf is essential in the bouquet garni (bundle of herbs for the stock). You can also use a bay leaf in chili and in stews made with beef or lamb., also if you make bean or lentil soup or beans or lentils as a vegetable. Just make sure you remove the leaf before serving the food since it tastes bitter. Use sparingly in all the above dishes because it has a strong flavour.

I use bay leavesin my beef stew and in my pot '
roasts too. I think it would go good in
most meat and vegetable combinations.
I have used bay leaves in roasting pork
also.Sometimesit just perks up any
vegetable you might be cooking. I just put it
in when I first start cooking them
and pull them out when the vegetables
are done.
