Gall Bladder Attacks

About 2 and a half years ago I was diagnosed with gall stones. I was told I would need surgery to remove my gall bladder, but they were not able to do it at that time. I have not yet gone back to get the surgery. Sometimes it seems I can eat whatever I want and it won't bother me at all. I can go months without any pain, and I may even begin to feel like the gall stones are gone. Then all of a sudden I start getting attacks again, and lately they have been over nothing! It used to be I would have to eat something really greasy to cause an attack, but now I'm having attacks over roasted pork and rice!
I am obviously going to have to get this surgery, and soon. I would like some testimonies from anyone who has had their gall bladder removed. What is it like afterwards? How long will I be in the hospital and not able to care for my kids? When will I feel better, what will I be able to eat?
Also, what sort of doctor should I look for? In the past I have just gone to the ER during an attack, but that will cost me $100 to walk through the door. It will be cheaper to go through a regular doctor, I just don't know if I should call a surgeon or go see a general practioner.
