Basic Preparation Method CHOCOLATE SPONGE Whisk eggs and sugar. Fold in flour and cocoa powder. Finish by adding melted butter. Pour into a 20cm cake ring and bake in a pre-heated oven at 180-200’C for 30 minutes. CHOCOLATE MOUSSE Put one layer of chocolate sponge on the bottom of a cake ring. Sprinkle with a little syrup and rum. Fill up half of the mould with chocolate mousse then with chocolate sponge. Sprinkle again with syrup and rum. Spread melted chocolate on top of the sponge. Finish by filling up the cake ring with chocolate mousse at the top. Put in the freezer. Garnish with white chocolate.
