Making a Fritatta for dinner tonight

I have never attempted one before, so tonight will be a first. I was reading a recipe for a Greek Fritatta that sounded yummy. Have you ever made one before? Got any tips for someone making one for the first time?

Hi lilybug. If this fritatta is the same thing I'm thinking is I do this many times. It is like a omellet right? Well sometimes I do this with leftovers. But you can do with many things like vegetables or sausage. One I like very much is done with boiled potatoes and sausage and onion. Chop the potato, chop the sausage and onion. Mix the eggs and add salt, black pepper and sharp sauce choped, add 1/3 cup of milk and 2 full tablespoon of flour. Mix well. Fry the onion, add the sausage and potato let it fry a bit and add the eggs and fry. Usualy I eat it with salad. Don't know if I helped you, I hope I do. cheers

That sounds pretty good. The one I am making has potatoes, spinach, onion, fresh oregano, and feta cheese in it.
