Another wonderful omelet discovery!

I try to use up leftovers in my morning egg-beater omelets and this morning I had a few spoonfuls of refried beans that needed to be used or thrown out. Since I rarely discard food, I dropped little bits around the omelet before I put the lid on it. It also had some leftover vegetables in it and a little sharp cheddar cheese. When I took it out I put it on my plate and used the little bit of salsa I had left to put on top of it. Oh, what a wonderful omelet!! And still under 250 calories!! I just found another way to use refried beans!

My mother-in-law used to always have a pot of pinto beans on the stove. They didn't mash them to refry them, but would serve them with the eggs and potatoes. Your version sounds just as good (although I've never found anyone who could cook potatoes and pintos like she did). I can never get an omelet to cook up as nice at home as in a restaurant, so I don't make them often. I hate the eggs to get browned - I like them fluffy and moist. But, just the way you described them, I might throw a few eggs in the pan tomorrow morning, and I have a can of refrieds in the pantry. Hmmmm. Sure wish I had some flour tortillas!! Now - where's that tortilla recipe I had.......

To keep them from getting brown, cook them until they're done on the bottom then lift up one edge and pour a little water in there. Put the lid on the pan and the eggs will steam themselves done--not rubbery or overdone, just nice and puffy!

Hi dragon. Me too never discard food (only if it become not good). Usualy I remake my leftover and this way I create new dishes. Personaly I don't like to eat food at morning, only a sand, milk and coffee much coffee lol. But I love omelets for lunch and dinner. Congratulations and thank for share your discovery.

I'm a coffee lover, too! Sometimes I end up with leftovers of a very small amount, too little to make something with. I put these in a container in the freezer and add to it whenever I have tiny bits. A spoonful of gravy or broth, a piece of broccoli and bit of meat, they all go into the freezer container. When it's full, I dump it into a crock pot (slow cooker) and cook it. It makes a wonderful soup, it's like getting a few more meals for free!

I'm glad you liked it! I am not much into heavy food first thing in the morning. Served for lunch, yes, or dinner but I wouldn't be able to handle the beans and especially salsa so early! Sounds good though!

I'm one of those people that aren't hungry first thing in the morning, I have to wait an hour or so after getting up before I eat. If I don't eat a lot of protein as well as a "filling" meal, I'm ravenous all day! So I make those egg-beater (generic, of course) omelets lots of times so I can make it through till lunch. My favorite breakfast used to be pizza but after I changed the way I eat (and my weight!) I learned to make my meals healthier and now forego the wonderful, tasty pizza!

That really does sound interesting and since we like tacos why not with eggs. It is amazing what you can create and actually taste good.

I never would have thought to put refried beans in with my eggs. It sounds interesting, but I am not very adventurous when it comes to trying new foods.

A new version of a Spanish Omelet. Sounds like something my hubby would create. Sounds like you enjoyed it. I am not that creative. Cheese and bacon is all I usually put in mine. Pretty ordinary I know. Well Bon Apetite'.

Nothing wrong with the old standbys, they're popular for a reason! I love, love, love bacon but can't eat it except rarely. It's always nice to start the day with something pleasantly surprising, though.
