I made this bread tonight and WOWza! is it every good. It has a nice crusty exterior yet a wonderfully chewy interior. Superb texture and aroma. It is called Brother's Bread and the recipe is from The Secrets of Jesuit Breadmaking by Brother Rick Curry, S.J. I got the recipe online. it can be found at http://apinchofthis.blogspot.com/2007/07/brothers-bread.html as well as on the food network http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_20941,00.html I took a picture, but did set the bread back in the oven for a few minutes afterwards as it did not appear to be quite done. It is surely not the prettiest of breads, due to myself and not the recipe, most likely, but it sure is tasty! I served it with slathering butter and pineapple/apricot preserves. Everyone wants more! So if you were thinking on making a good hardy bread I would recommend giving this recipe a try. I would like to mention, however, that I found it a little too salty and it does call for a lot of salt in my opinion... I am going to try to make it with a bit less next time and see if it still has the lovely texture.

Modestah, although I consider myself a good cook, I am not much of a baker. This looks so good I would like to give it a try. I do not have a kitchenaid mixer like the one the blog describes, I wonder if it can be mixed by hand before the kneading? Or if a hand mixer would work? any idea? how did you mix yours?

dear angelwhispers I also do not come equipped with any fancy gadgets and used my hands. I think it tastes better with a bit of my own special flavoring in it...hahaha! I doubt the peasants of days gone by had a dough hook and mixer either.

I've never had much luck with homemade bread as much as I've tried...the yeast part seems to get me everytime. I am interested in trying this one though since it sounds easy and tastty. Any tips to get the yeast to work right?

check the date on your yeast first. I had some yeast stored in the freezer which I tried that did not take - so discarded and started again with some I have kept in the fridge - took fine. the water needs to be warm, not hot - hot water will kill the yeast. I have my water to what most would consider comfortable bath water then stir the yeast in to dissolve. The yeast then feeds on the sugar and releases gases which cause the bread to rise, as I understand it. Let the sugar and yeast sit till it becomes frothy before adding it to the flour

That sounds wonderful, and I LOVE the word "slather"! I seldom make my own bread...I guess that I just don't take the time. I had thought about getting a bread maker, but after pricing it and then all of the items used to make the bread, it was cheaper just to buy bread at our local bakery. I may try this recipe though!

other than being a tad too salty it was exceptionally delicious. It is easy to fathom how they could have been satiated on bread, broth, and cheese.

I don't like salty bread but Wow! That Brother's bread sure looks fantastic and yummy! You said it has a crunchy exterior? I would love that! I'm starting to salivate here. LOL! Oh, and thanks for the recipe links. You're wonderful.

It called for 1.5 TBS I am thinking I will try it with 1.5 teaspoons and see how that is. Both loaves were gone before morning's light

oh sounds good modestah...yeah the internet is a very good resource for recipes. keep it up, i am sure your family loves it. yesterday, i did some baking, too. but just hotcake mix that i used to make a cheese loaf. tastes good too. my hubby loved it! i made two loaves, but they are all gone now. lol i love to cook and bake for family! :-) good day dear!

Yes, they all but devoured it - I had to hide some so that my beloved husband can enjoy a couple slices with his breakfast... he did not get any this evening. I think I will toast it for him and serve with fried eggs. please tell me about your cheese loaf.... or did you start a discussion about it? thanks!

I love homemade bread. This sounds like heaven. I also love the name and I'm pretty sure these guys know how to make bread. Slathering butter sounds very enticing. LOL. Thanks for the tip. I'll add the recipe to my growing list of faves.

Not the prettiest? It sure looks good to me. I love the smell of freshly baked bread and can just imagine having a warm slice with the pineapple apricot preserves.

This looks so good. I love to smell bread baking and I think I could eat the whole thing alone. mmmmm mmmmmm mmmmm Thank you for the link. I do not have anything other than my hands to mix up bread with either. But I'm sure that I can manage without as someone has already said. Thank you.
